Mix flour, butter and salt to obtain a crumbly mixture. Add the egg yolk and water and knead the dough quickly, just enough to stick to the lump.
Wrap the dough in cling film and refrigerate for an hour or more.
Fry finely chopped shallots in olive oil. Add the sliced pizza ham and asparagus, simmer, then cool down.
Combine the eggs, cream and cheese.
Roll out the dough, line it with the pan and pierce it several times with a fork. Cover the dough with baking paper and cover it with approx. half a kg of dry beans or rice, which serve as a weight when baking.
Bake for about 20 minutes at 180 °C, then remove the baking paper with the beans.
Pour the filling into the semi-cooked dough and bake for another half hour. Wait for it to cool down a bit, cut the quiche into pieces and serve.
