Our newest product, which is unique on the Slovenian market, perhaps resembles prosciutto at a first glance, but it actually writes its very own story.
With its decisive character and flavour, prosciutto contrasts the delicate Karst Flower, which also requires its time; we must pay full attention to it and ensure at least nine months of maturation, so that it can bloom in all its beauty and develop the perfect aromas and enchanting scent.
It was given this poetic name due to its premium quality, as we make it from the most valued part of a pork leg, from which we remove the bone and skin. We exclusively use the dry salting method to prepare it, and maturation takes place under the careful supervision of our master prosciutto makers. Therefore, this luxury product represents the most prized selection of highest quality meat, which is matched by its aesthetics, as the ruby red colour of the muscle meat resembles the blossom of a red royal rose.
It would be a shame to overwhelm the delicate taste of this unique gourmet delicacy with more intense aromas. The Karst Flower is best paired with a simple slice of good white bread and your loved ones, in whose company you indulge like only true gourmets can.
