Dry-cured ham contains a small quantity of salt and fat and is rich in vitamins and minerals. Because the proteins have been broken down it is very easy to digest and has a high nutritional value. Its protein content is even higher than cooked meat as fresh meat loses a lot of proteins when it is cooked.
